Grilled Basil Chicken

Ingredients

  • ¾ cup balsamic vinegar
  • ¼ cup fresh basil leaves (Gently rub under cold water)
  • 2 tbsp olive oil
  • 1 garlic clove, minced
  • ½ tsp salt
  • 4 plum tomatoes (Scrub with a clean brush under water)
  • 4 boneless, skinless chicken breast halves (4 ounces each)

Directions

  1. Wash hands with soap and water.
  2. Wash basil and tomatoes, then blot them dry with a clean paper towel.
  3. Using a clean cutting board, cut tomatoes into quarters.
  4. Blend the first six ingredients together until well mixed.
  5. Place chicken in a shallow dish and marinate for 1 hour in the fridge, turning occasionally.
  6. Do not rinse raw poultry. Wash the dish after handling raw chicken.
  7. Grill chicken over medium heat for 4-6 minutes per side.
  8. Do not reuse marinades from raw food.
  9. Cook until internal temperature reaches 165°F.
