
Grilled Basil Chicken
Ingredients
- ¾ cup balsamic vinegar
- ¼ cup fresh basil leaves (Gently rub under cold water)
- 2 tbsp olive oil
- 1 garlic clove, minced
- ½ tsp salt
- 4 plum tomatoes (Scrub with a clean brush under water)
- 4 boneless, skinless chicken breast halves (4 ounces each)
Directions
- Wash hands with soap and water.
- Wash basil and tomatoes, then blot them dry with a clean paper towel.
- Using a clean cutting board, cut tomatoes into quarters.
- Blend the first six ingredients together until well mixed.
- Place chicken in a shallow dish and marinate for 1 hour in the fridge, turning occasionally.
- Do not rinse raw poultry. Wash the dish after handling raw chicken.
- Grill chicken over medium heat for 4-6 minutes per side.
- Do not reuse marinades from raw food.
- Cook until internal temperature reaches 165°F.
